Shrimp with Peach Salsa
Description: CUSTOMER FAVORITE: Fresh and tender shrimp cooked with fire roasted tomatoes, diced peaches, and rounded out with a bed of warm rice.

Easy Cooking Instructions:
- Bring 3 cups of water to a boil in a medium saucepan. Add rice, stir, & simmer 20 mins. Fluff with fork.
- Meanwhile, add oil to a large skillet & add onion; cooking 3 mins on medium high heat until tender.
- Add tomato & peach mixture & cook 2-3 mins. or just until boiling.
- Add shrimp & cook 2-3 mins until shrimp turn pink, stirring frequently.
- Serve over shrimp mixture over rice & enjoy!
